Steve likes to use a trail camera certain times during the year. Now I can't tell you where that camera is put - but it automatically takes a picture whenever there is movement in front of it. Over the season we get some unusual and not so unusual pictures. I thought I would share with you today some of the scenes he saved and sent to me via email.
Well, here's two buddies heading off into the morning to see if they can finish wreaking havoc somewhere or maybe they are just heading back to bed. We have a lot of coons here on a regular basis and if we did not have the dogs handy they would eat us out of house and home in our bird feeders.
The next one is of a fox - we often hear these fellows barking, more so during the summer. Steve found one bedded in a hollow tree very close to our house a few weeks ago - not someone I want hanging around when the chickens are out enjoying the day.

Then this next one is a shot of one that we hear a lot oftener than we would like - usually every evening shortly after dark, they start their howling, getting the dogs all "riled" up. This is a coyote and look at how big it is.

Then my favorite picture of all - this was an early morning picture and it was foggy - looks as if this group is checking out the camera.

Just love this shot - they seem a bit puzzled, probably because the flash just went off and they wonder what in the world is going on. So just some of the "picture taking" that my husband does. In addition, today, you can find the recipe for the Creamy Swiss Onion Soup that I had on here earlier this week - I must warn you - when you purchase the ingredients to make this soup - it would be a good idea to pick up a couple of pack of breath mints along the way too - that is if you plan on being around any people. If you try it and like it - let me know. I tried another one this week too and Steve thinks it is the best - but this one is my personal favorite - and for my friend, Laurie - note that this food choice would definitely not fall in the health nut category! So here is the recipe:
Creamy Swiss Onion Soup
7 Tablespoons butter, divided
1 1/2 cups day old bread crumbs
3 large onions, quartered and thinly sliced
1 1/2 cups water
4 1/2 t. chicken bouillon granules
1/4 cup flour
1 3/4 cups milk, divided
1 1/2 cups shredded swiss cheese, divided
Melt 3 Tablespoons of butter; toss with bread cubes. Place on a lightly greased baking sheet. Bake at 350 degrees for 7 minutes; turn and bake 7 minutes longer, until toasted
Meanwhile; in a large saucepan, saute onions in remaining butter until lightly browned, about 12 minutes, Stir in water and bouillon; bring to a boil. Reduce heat, cover and simmer for 15 minutes.
Combine flour and 1/2 cup milk until smooth; gradually stir into onion mixture. Stir in remaining milk. Bring to a boil; boil for 2 minutes, stirring until thickened. Reduce heat to low; stir in 3/4 cup swiss cheese.
Ladle into bowls, sprinkle with croutons and remaining cheese, broil 4 inches from heat until cheese is melted.

I doubt I'd know the difference between a coyote and a dog. The fox is very beautiful and much easier to identify. Thank you both for the interesting and beautiful forest creature pictures--plus a tempting recipe.
